1Grind right before you brew
Ground coffee loses its aroma within minutes. Whole beans keep it locked in until the last second.
2Hot, not boiling: 92–96 °C
Boiling water burns the sweet notes. Let the kettle rest 30 seconds after it clicks.
3Weigh it, don’t guess
Espresso 1 : 2 (18 g in, 36 g out), filter 1 : 16. Sour? Grind finer. Bitter? Coarser.
4Seal it, skip the fridge
Keep the bag closed in a dark cupboard and finish it within about a month of opening.

Run by José Nahun Fernández Sabillón, it’s here where the Parainema varietal that makes up this lot develops its vibrant flavour. The region’s unique microclimate, careful natural processing, and exceptional craftsmanship of Nahun Sabillón have resulted in this coffee being recognised on the international stage too, with the fourth place in the Cup of Excellence competition solidifying its status as one of the finest coffee varieties in the world.
